A West Coast IPA with Mosaic, Mosaic LUPOMAX, Abstrax Omni Mosaic (extract), Simcoe, Simcoe Cryo, and Nectaron hops.
Recipe for this post can be found here.
Appearance
Pours 1/2” of foam head with great retention and leaves plenty of lacing. The beer is pretty hazy for having been in the keg for 2 weeks now. In this batch I ran out of the clarifying agent I typically add at kegging and it’s obvious how much a difference that makes when comparing it to my last batch at the same time period. I imagine it will slowly clear up the longer it’s in the keg. The color is a light straw hue.
Aroma
The Mosaic really stands out in the aroma. Since it has both Abstrax hops, Mosaic LUPOMAX in the dry hop and even more in the whirlpool, it’s not surprising. It’s quite fruity and clean.
Taste/Mouthfeel
The beer is light in body with moderate carbonation. The Mosaic hops are apparent in the first sip. I get some blueberry and a touch of dankness. It transitions into some citrus and light pine in the finish. Has a low to medium bitterness. It’s a bit tricky to pick out any malt flavor with the huge amount of hops but I do think it’s complementary. Compared to some previous batches with 100% Pilsner, I find this to be more interesting.
Impressions
In this batch the main variable I was experimenting with was the yeast. I swapped my typical ale yeast (Imperial Flagship A07), with a lager yeast (Imperial Gobal L13). The results are pretty stark. The beer is very clean and the hop flavor just seems to be amplified even more than my prior batches with a similar grain and hop bill.
As mentioned on a previous tasting, I think the grain bill is more-or-less perfect. I plan to continue using lager yeast to ferment as I experiment more with hop varieties and times that they are introduced. I’m extremely happy with how this turned out, I don’t detect any of my normal “homebrew” off-flavors and think it tastes comparable to some of my favorite pro-produced IPAs.
